Fifty years in one town

Luz Azul has been a dairy business in Azul, in the province of Buenos Aires, for more than fifty years. That is long enough for the work to have been handed between generations of the same plant: the same water, the same milk from the same part of the province, and a lot of people who learned the job from whoever stood at the vat before them.

In 2012 a new team took over the direction of the company, brought in from the cheesemaking industry rather than from outside it, and the business changed shape. What had been a regional dairy started planning like a national one — first by fixing what it made, then by deciding how it would reach the people who eat it.

The answer was not a supermarket shelf. It was our own counters, staffed by people who know what they are cutting, stocked from a plant that knows exactly where each wheel came from. There are now more than seventy of those stores around the country, and every one of them is supplied from Azul.

How the work is actually done

Milk from the province

The raw material comes from the dairy region around Azul, so it reaches the plant the same day rather than after a long haul.

Cut at the counter, not pre-packed

In our stores cheese is portioned in front of the customer, to the weight they ask for. It is a slower way to sell and a better piece of cheese.

One plant, every store

There is no second source. Every franchise counter in the network is stocked from the same production hall in Azul.

A plant rebuilt, not patched

Two years of work turned the old facility into a modern line, with the maturing and cold-chain capacity the store network needs.

The rebuild, and what it was for

Over the last two years the dairy plant in Azul was taken apart and put back together. The work was presented with the people who run it and the people who work in it standing in the same room, which is roughly how the decisions were made in the first place.

The point was not modernity for its own sake. A store network of this size only holds together if the plant behind it can produce consistently, mature properly and dispatch on time, week after week, to counters that are hundreds of kilometres apart. So the investment went into the production line, the maturing capacity and the cold chain — the unglamorous half of a cheese business.
